E. coli O157:H7
E. coli is a normal inhabitant of the intestines of all animals, including humans. E. coli O157:H7 is a rare variety of E. coli that produces large quantities of toxin that cause severe damage to the lining of the intestine. Undercooked or raw hamburger has been implicated in most of the documented outbreaks, although the prevalence of animal manure in agricultural practices has led to outbreaks in other foods, such as fruits and vegetables.
